Obsttorte



Here is a recipe for the fastest and yummiest cake for the summer. The batter is made quickly. It is a spongecake recipe that is perfect for holding fresh fruit. It is easy to make and does not take much time.




Blitzbiskuit/Spongecake
Ingredients:
2 eggs
2 tblsp cold water
1/2 cup sugar
1/2 tsp vanilla extract
1/2 cup flour
1/2 cup corn starch
1 tsp baking powder
1 cup of fruit yogurt
fresh fruit (strawberries, peaches, etc. washed and sliced)
(optional 1 pkg of gelatin topping)




Directions:
In a large bowl with hand-mixer beat eggs and water until foamy, add sugar and vanilla. Mix well for 3 min. Combine flower, cornstarch and baking powder in separate bowl, then gradually add this mixture to the eggs and fold under at low speed. Pour batter into a spring-form and bake at 390F for 15 minutes.






Let cake cool off completely. Spread one cup of yogurt onto bottom of cake and add fruit on top. 
Optional - pour gelatin (as instructed on the package) over fruit and refrigerate.
