Red Chicken

The best BBQ Chicken ever.
My mom used to make this chicken in the 70s a lot. It is a favorite dish of the whole family and I remembered it yesterday when I was looking at the thawed out boneless chicken thighs in the sink. I think it was from a very old Good Housekeeping Cookbook. It's done fast and you can bake the chicken in the oven, no grilling necessary (great in the winter season too).
We called it "Red Chicken".

Ingredients:
Sauce:
2 tsp Salt
1/4 tsp Pepper
1 1/2 cup Tomatopaste
1/4 tsp Cayenne Pepper
1/4 tsp Mustard
1 tsp Garlic Powder
1 Bay Leaf
41/2 tblsp Worcestershire Sauce
3/4 cup Vinegar
1 tblsp Sugar
3 tblsp Butter
1 tblsp Syrup or Honey
3 - 4 tblsp Water
Chicken pieces (I used 1 pound of skinless/boneless thighs)

1 onion slices (optional)

Combine all ingredients for Sauce in a saucepan and simmer for minimum of 15 minutes. In a 9x13 baking pan arrange chicken pieces, cover with BBQ Sauce (and optional onions). Bake in oven until chicken is tender (30 min.) at 375F. Of course always good to grill on a BBQ too.
